As ever our customers’ find multiple applications for our equipment but two very common one’s on our Tempering Units are;
Frozen product can be brought up to a desired temperature in a rapid but controlled environment which will protect against heat damage with the added protection of online logging systems and local alarms. The controlled defrosting works where two probes work together to control the heating and cooling of the unit’s temperature ensuring product temperature rises while also being protected against spoilage. The core probe works to a set point where it will control the heat produced in the room until the desired end temperature is reached, while the Skin probe’s function is to protect against spoilage so will cut out heating and bring in cooling to prevent the product from cooking. Once the temperature has been achieved the unit switches into ‘hold mode’ at the desired temperature until unloaded.
